Ingredients

2 Elk chops

4 tbs Olive oil

Salt and pepper to taste

1/2 cup red wine

2 tablespoons butter

1 shallot, finely chopped

Fresh thyme

Instructions

Season the elk chops with salt and pepper.

Heat olive oil in a skillet over medium-high heat.

Sear the elk chops for about 3-4 minutes on each side for medium-rare or adjust the cooking time to your desired doneness.

Remove the chops from the skillet and let them rest a few minutes.

In the same skillet, add chopped shallots and cook until softened.

Pour in the red wine and simmer until it's reduced by half.

Stir in the butter and fresh thyme and cook until the sauce thickens.

Pour the red wine sauce over the elk chops before serving.
